Lankaran's local cuisine is rich and diverse: rice, meat, fish, vegetables and melt-in-your-mouth sweets are staples in the diet of the residents of this region, situated in the subtropics between the Talish Mountains and the Caspian Sea. This region is also known for its multiculturalism, which has brought its own special colour to the country’s dishes.
The most famous dish here is ‘lavangi,’ which is made from chicken or fish stuffed with nuts, onions, plum paste, or sour fruit leather (‘lavashana’). It is traditionally baked in a ‘tandir’ – a cylindrical clay oven also used to bake delicious bread. Other dishes worth trying include pumpkin and lentil plovs, ‘fisinjan’, and ‘kulcha’ flatbreads. Vegetarians can enjoy ‘kükü’, an incredibly tasty omelette with onions and herbs. Those with a sweet tooth should finish off by indulging in traditional treats like ‘loku’ and ‘gandli kulcha.’
