Kükü is an integral part of traditional Azerbaijani cuisine that you can find all over the country, especially at breakfast.
The most common type of kükü is prepared with herbs, which resembles a green omelette, served both hot and cold.
Made from fresh green herbs and eggs, it signifies the renewal of nature and the arrival of spring. Kükü is typically presented in a diamond shape, which, according to some researchers, symbolises new life. It can also be served on top of plov as a garnish.

- Spring onion - 20 g
- Cilantro - 20 g
- Dill - 20 g
- Sorrel - 20 g
- Melted butter - 20 g
- Crushed black pepper - 0.2 g
- Salt - 3 g
The herbs are washed and finely chopped. Then, raw eggs are beaten into the greens, along with salt and pepper. Butter is heated in a pan, into which the egg and herb mixture is poured and smoothed over. The pan is covered and cooked until the eggs set. The kükü is then cut into two or four equal pieces, flipped, and the other side is browned. It is traditionally served in a diamond shape, often with a side of yoghurt.
