For the special Novruz holiday, Azerbaijani people, who have a rich national cuisine, bake various pastries, which symbolise the sun and moon that they once worshipped. For example, the sweet pastry shekerbura is considered to represent the moon, while goghal is thought to be a symbol of the sun. Goghal is a delicious soft pastry loved by all, made of delicate dough layers with filling. This traditional delicacy comes in both savoury and sweet varieties.
Savoury goghal and sweet tea are one of the famous combinations of the Azerbaijani breakfast.
Below are the ingredients and recipe to prepare this delicious dish:
Ingredients
- Fine wheat flour - 700 g
- Melted butter - 300 g
- Egg - 1
- Yeast - 15 g
- Cumin - 1 g
- Saffron - 0.5 g
- Fennel seeds - 2 g
- Black pepper - 0.5 g
- Poppy seeds - 3 g
- Salt - 15 g
Preparation
Water, yeast and salt are added to the sifted flour, and a firm dough is kneaded, with saffron added on top. A portion of the flour is reserved for the filling. Butter, pepper, salt and other spices are added to the flour, from which the filling is prepared. The dough is rolled out, butter is added to the layers, and it is cut. The filling is placed on top and rolled into a roulette shape. Then it is twisted and shaped into a ring. Egg mixed with saffron is brushed on top, sprinkled with poppy seeds, and baked in the oven at 230-240℃.
